White Bean and Balsamic Leek Crostini -

Creamy white beans on crispy baguette topped with luscious leeks and balsamic vinegar! What more could you want in a perfect party appetizer or lunch sandwich!

  • ½ Baguette, sliced thinly
  • 2 cups White Beans
  • 1 Tsp. Olive oil
  • 2 Sprigs Fresh Thyme, roughly chopped
  • 1 Tsp. Vegetable oil
  • 1 Large Leek, sliced thinly
  • 2 Tbsp. Balsamic Vinegar
  • 1/2 Tsp. Sugar
  • 1 Tsp. each Salt and Pepper or to taste


  1. In a large pan over medium heat add the vegetable oil with the leeks and sauté for about 5 minutes. Add the balsamic vinegar, the sugar and salt and pepper. Sauté for another minute and remove from heat.
  2. Lightly mash the white beans with a fork and add in the olive oil, fresh thyme and a pinch of salt and pepper.
  3. To assemble the crostini: toast the baguette slices and top with about 1 tsp. of the white bean mash and then another tsp. of the leek mixture. Drizzle with a bit more olive oil and balsamic vinegar if desired.
