So you've decided to host Thanksgiving dinner this year...

2. Main Meal:
For the main meal, I chose a showstopper! Give each person their own Chickpea, Tofu and Spinach stuffed buttercup squash to carve and savor. This will definitely impress all your relatives - even the picky ones!

While people are enjoying their own squash, have a few other sides on the table that your guests can pass around and share. Have a basket of fresh breads or crackers available with some fun dips such as:

This meal deserves some fantastic vegetable sides, like my delectably sweet and sticky Honey and Orange Roasted Carrots, Grilled Oyster Mushrooms and Roasted Baby Artichokes, carrots, cauliflower and baby potatoes which are rich both visually and in flavor! Instead of stuffing, here's a great dish that is moist and gratifying: Spicy Couscous with Chickpeas and Nuts - it definitely fits the role!
