Thai Inspired Squash and Lentil Dip -

This is a great dip for veggies or pita chips! The combination here is just crazy delicious…only problem is you won’t be able to stop eating it!!

Ingredients

  • 1 Small Buttercup Squash
  • 1 Cup Cooked Green Lentils
  • 2 Tbsp. Coconut Cream
  • 5 Kefir Lime Leaves
  • 1 Tsp. salt
  • 1 Chili Pepper
  • 1 Tbsp. Maple Syrup
  • 1/4 Cup Water

Preparation

  1. Preheat oven to 375 F.
  2. Cut squash in half and remove the seeds. Place on a parchment lined baking sheet cut side down. Bake at 375 for 40 minutes until soft. Remove from oven and allow to cool
  3. Scoop out flesh of the cooked squash and place in a food processor with all other ingredients. Process until smooth (you can add more water if you like your dip a little thinner).
