Spiralized Shoe String Potatoes -

These are crazy addictive!! They come out super crispy and tasty – from the oven – no deep frying necessary! You will need a spiralizer to create the shoe string effect here.

  • 3 Medium Potatoes
  • 1 Tbsp. Vegetable oil
  • 1 Tsp. each Salt and Pepper, or to taste

  1. Preheat oven to 400 F (205 C).
  2. Cut off about ½ inch off of both the ends of the potatoes (that way you have a flat surface to place in your spiralizer). Spiralize to create noodles like strands. Place on a parchment lined baking sheet.
  3. Using a pair of kitchen scissors, randomly make a few cuts throughout your spiralized potatoes (this will ensure you have more manageable pieces to pick up, otherwise I find they are too long). Drizzle with the vegetable oil and salt and pepper.
  4. Try to spread out your potatoes as much as possible on the baking sheet to ensure even cooking.
  5. Bake at 400 for 30 minutes. Remove from heat and allow to sit for 2 minutes before trying to remove from tray.
