Curried Squash and Apple Soup

This is a perfect Autumn harvest soup! The apples add a slight tang that pairs so nicely with the creamy sweetness of the squash!

Tomato and Zucchini Gazpacho

This is a really refreshing soup for a light dinner on a hot summer evening! You will notice I didn’t add any water to this recipe, since tomatoes and zucchinis tend to have lots of water. However, you can always add a bit of water if you want a thinner soup.

Kale, Cauliflower and Lentil Soup

This soup is chalk full of goodness! A whole bunch of superfoods in one bowl – the kale, lentils and cauliflower will keep you feeling satisfied and healthy! This recipe will give you a nice big pot of soup – it will serve about 8 people as a meal. You can cut it in half if you like or make the whole thing and freeze any leftovers for another meal.

Edamame Udon Noodle Soup

This is a delicious soup with a fun Asian twist. In this soup I make a quick Vietnamese style broth, that gets its deep color from onion peels! I then throw in some protein packed edamame beans and udon noodles for a seriously satisfying meal!

Creamy kale Soup topped with Kale Chips

This is a great soup to serve as a first course if you want to really impress company! The delightfully creamy soup is topped with an unusual soup topper- kale chips. They add a slight crispness in every bite that brings this soup to a whole new level! The soup can be prepared a couple of days in advance, store in an airtight container in the fridge. Just before serving heat the soup and top with the kale chips. If you prefer you can also pass around the chips and allow guests to top their own bowls as they please.

This is a great hearty soup! Full of veggies, beans and pasta it’s a full meal in itself!

Coconut and Ginger Buttercup Squash Soup

The mix of sweet from the pumpkin with the heat from the chilli and creaminess from the coconut is an unbeatable combination!

Roasted Tomato and Poblano Soup

Roasting the tomatoes before processing them in the soup brings out their natural sweetness and bold flavours. This is a great soup to make in summer when you can buy big boxes of fresh tomatoes in the farmer’s markets for very little money. In this version of the soup I added poblano peppers for a touch of earthy heat. This soup is a real winner!

Tomato, Lentil and Cabbage Soup

This is a hearty soup that I love on a cold winter night! Because this soup uses dried lentils, the salt is only added at the end – if you add it earlier, the lentils likely won’t soften – this also means if you are using a vegetable stock use a low sodium one.

Creamy Leek and Celery Root Soup

This is a great alternative to the classic leek and potato soup. Celery root is much healthier than potatoes and it has such a soft and creamy flavour. It is a bit of a weird looking vegetable, but don’t be scared of it – it’s delicious!

Classic Middle Eastern Lentil Soup

This is a recipe for the traditional Middle Eastern lentil soup. It is one of my favourite comfort food recipes! Full of lentils and veggies and flavoured with cumin and coriander seeds, just an overall delicious soup! Although I usually encourage you to season with salt throughout your cooking, in this recipe it is important to not add the salt until the very end. The reason is because I use dried lentils, and they will not soften if you add salt at the beginning!

Swiss Chard, Red kidney Bean and Tomato Soup

This is a hearty and satisfying soup full of chopped fresh swiss chard and beans. I love using fresh swiss chard when it is in season, it adds so much flavour to anything you put it into!

Roasted Carrot and Dill Soup

I love roasting carrots to bring out their natural flavours and sweetness! In this soup, you won’t believe just how well the fresh dill pairs with the carrots!

Mushroom Cabbage and Barley Soup

I find this soup to be extremely comforting and hearty! The deep flavours of mushrooms bring this soup to life, and with the added healthy grain barley, this soup is a super meal!

Tomato, Leek and Rice Soup

This is a delicious tomato based soup, with fresh leeks and other veggies. I find adding rice makes it a hearty meal!

French Onion Soup

This soup is my personal favourite! So cheesy, I am in heaven when I eat it! Emmental cheese is classic for this soup, but you can also use Jarlsberg or Gruyere if you prefer.

Roasted Tomato Soup

This is a light soup with incredibly deep flavours! That is thanks to the caramelization achieved by roasting the tomatoes on high heat before pureeing them.

Leek, Chickpea and Tomato Soup

I absolutely love this comforting and hearty tomato based soup! The addition of chickpeas makes it a really satisfying meal.
