Slow Cooker Butternut Squash and Lentil Curry -

This is a nice hearty flavorful dish to come home to on a cold night! Serve over some basmati rice or with some grilled naan bread.

Ingredients

  • 1 Onion, peeled and sliced
  • 2 Cups Butternut Squash, peeled and cubed
  • 1 Cup Dried Lentils
  • 2 Cloves Fresh Garlic peeled and chopped finely
  • 1 Tbsp. Chopped Ginger
  • 1 Fresh Chilli pepper, Finely chopped
  • 2 Tbsp. Curry Powder
  • 2 Tbsp. Tomato Paste
  • 2 Cups Water
  • 1 Can Coconut Milk
  • Salt and Pepper, to taste

Preparation

  1. Combine all ingredients in a slow cooker. Set on low for 8-10 hours.
