Colourful Spring Salad

This salad is a great side salad for a barbecue because of the vibrant colours and fresh crunch it offers. It can also be nice to pack for a lunchtime healthy meal.

Makhloube (Rice with Eggplant and Pine Nuts)

This is a traditional Middle Eastern rice dish. Makloube directly translated to English means to flip over, that is because in this dish the eggplant is cooked under the rice and when ready to serve you flip over the dish allowing the eggplant to shine on top for a spectacular display!

Cheater Breakfast Potatoes

These potatoes remind me so much of the potatoes you get in restaurants on the side of your omelette. This quick version uses poultry seasoning to spice them up. Poultry seasoning is a blend of spices such as dehydrated garlic, onions, paprika and salt. It’s a great cheat!

Beer Battered Onion Rings

Boy do I love onion rings! I always order them in restaurants when I can, but nothing beats freshly fried beer battered onion rings! You can serve them on the side of a veggie burger for a fun meal, or as an appetizer for a dinner party or game day with a spicy mayo dipping sauce.

Snow Pea Shoots, Bok Choy and Tofu in Black Bean Sauce

Snow pea shoots are delicious greens, they are the actual plant that snow peas grow on. You can find them in Asian grocery stores, if you can’t find them replace them with any other green that you like such as beet greens, spinach or swiss chard.

Chinese Broccoli and Bok Choy in Black Bean Sauce

This is a great stir fry similar to what you would find in a Chinese restaurant. You may need to go to an Asian grocery store to find the Chinese Broccoli. Since this dish needs to be served immediately I like to wash and chop all my ingredients in advance and just as I am about to serve I make the stir fry.

Quinoa Salad with Grilled Onions, Asparagus and Orange Segments

Quinoa is a super grain because it is one of the few foods that provides vegetarians with a complete protein. This salad is particularly nice because of the colour and texture contrasts. I find grilling the onions adds an extra element of flavour and the orange segments are really nice as they burst in your mouth!

Grilled Oyster Mushrooms

Although oyster mushrooms can be pricey, they are well worth it. They have so much great flavour and texture. This dish is very simple, but makes a lovely side dish. It can also be served with some grilled peppers and onions as an antipasti salad.

Spicy Steamed Sweet Potatoes with Lime Leaves

Sweet potatoes are loaded with vitamins and nutrients so I try to get them into my diet as often as possible. Steaming them is not only simple, but it allows the sweet potatoes to become creamy and delicious without adding any extra fat. In this dish I love the contrast of the sweetness from the potato with the heat from the chilli.

Chinese 5 Spice Crunchy Chickpeas

These chickpeas are so crunchy and addictive – your family will devour them without realizing how healthy they actually are!

Roasted Chickpeas with Caramelized Garlic

In this recipe the garlic becomes so sweet and creamy, which really compliments the crisp roasted chickpeas.

Tomato and Bulgur Pilaf

Try this different method of cooking bulgur – it works as a beautiful side dish and brings out the natural nuttiness of the grain.

Aloo Gobi (Potato and Cauliflower Curry)

This is a traditional Indian Curry. I find the potatoes and cauliflower go so nicely together for a hearty comforting meal. Serve over basmati rice any day of the week!

Cardamom Scented Basmati Rice

The cardamom adds a flowery aroma to the rice which makes it feel special! If you are not used to the taste of cardamom, start off with half a teaspoon, but if you really want the cardamom taste to shine use the full teaspoon.

Crispy Roasted Potato Wedges

I finally cracked the code to perfect restaurant style potato wedges! They come out so tender on the inside and crisp on the outside!

Roasted Baby Artichokes, carrots, cauliflower and baby potatoes

I love fresh baby artichokes, they are so tender and sweet. In this dish they are caramelized with cauliflower, carrots and potatoes – delicious!

Spicy Couscous with Chickpeas and Nuts

This dish is deliciously spicy and hearty full of chickpeas and nuts. You can serve it as a side dish with roasted vegetables or it is great as a meal in its own!

Fresh Homemade Pickles

This is a really great recipe for pickled vegetables that you can make at home. You can really use any veggies you like as long as they are crunchy and hearty.

Herbed Bulgur

Bulghur is a healthy grain with a nutty taste that can be used as a side dish instead of rice when you need a change. It is very simple to cook any day of the week! In this recipe I used palm oil, but it can also be made with vegetable oil.

Easy Spinach and Chickpea Curry

This is a hearty vegetable curry that is quite simple to prepare. I felt a need for a simple curry, so in this recipe I used store bought curry powder and paste as well as frozen spinach.
