Makhloube (Rice with Eggplant and Pine Nuts)
This is a traditional Middle Eastern rice dish. Makloube directly translated to English means to flip over, that is because in this dish the eggplant is cooked under the rice and when ready to serve you flip over the dish allowing the eggplant to shine on top for a spectacular display!
Cheater Breakfast Potatoes
These potatoes remind me so much of the potatoes you get in restaurants on the side of your omelette. This quick version uses poultry seasoning to spice them up. Poultry seasoning is a blend of spices such as dehydrated garlic, onions, paprika and salt. It’s a great cheat!

Boy do I love onion rings! I always order them in restaurants when I can, but nothing beats freshly fried beer battered onion rings! You can serve them on the side of a veggie burger for a fun meal, or as an appetizer for a dinner party or game day with a spicy mayo dipping sauce.

Snow pea shoots are delicious greens, they are the actual plant that snow peas grow on. You can find them in Asian grocery stores, if you can’t find them replace them with any other green that you like such as beet greens, spinach or swiss chard.
Chinese Broccoli and Bok Choy in Black Bean Sauce
This is a great stir fry similar to what you would find in a Chinese restaurant. You may need to go to an Asian grocery store to find the Chinese Broccoli. Since this dish needs to be served immediately I like to wash and chop all my ingredients in advance and just as I am about to serve I make the stir fry.
Quinoa Salad with Grilled Onions, Asparagus and Orange Segments
Quinoa is a super grain because it is one of the few foods that provides vegetarians with a complete protein. This salad is particularly nice because of the colour and texture contrasts. I find grilling the onions adds an extra element of flavour and the orange segments are really nice as they burst in your mouth!

Although oyster mushrooms can be pricey, they are well worth it. They have so much great flavour and texture. This dish is very simple, but makes a lovely side dish. It can also be served with some grilled peppers and onions as an antipasti salad.

Sweet potatoes are loaded with vitamins and nutrients so I try to get them into my diet as often as possible. Steaming them is not only simple, but it allows the sweet potatoes to become creamy and delicious without adding any extra fat. In this dish I love the contrast of the sweetness from the potato with the heat from the chilli.
