This is a really nice refreshing picnic basket salad! For this salad I used a spiral veggie slicer to get the cucumbers so thin. If you do not have one, you can use a mandolin or just a very sharp knife and slice as thinly as possible. This salad can keep in an airtight container in the refrigerator for up to 1 week.

Celery Root Slaw
Celery root may look daunting at first if you have never used it, but it has such a nice nutty refreshing flavour. This recipe is a great way to start using it. I recommend using a food processor to grate it, it’s quicker, but you can always use a box grater if you prefer. If you are making this salad in advance refrigerate overnight - it is even better the next day!
