Crockpot Paella

This is a great hearty meal to come home to – best of all the crockpot does all the work for you! When making a crockpot meal, I always prepare my ingredients the day before and place them in the fridge in a large bowl. In the morning, I just throw everything together in the crockpot and leave for the day. When I come home dinner is ready! If you are doing so with this meal, I recommend keeping the rice separate from the other ingredients. Mix together in the crockpot in the morning.

Lentil Rice (Mujadara)

This is a real Middle Eastern bowl of comfort! Lentils, rice and fried onions all in one bowl – what more can you want!

Broccoli Egg Fried Rice

This delicious one pot meal is a great use for leftover rice! If you do not have leftover rice, just cook a pot of rice before frying up your veggies and add it to the dish.

Cauliflower Rice

This rice is actually made from .... yes... cauliflower!!! It looks and feels just like rice – without all the guilt! Great for topping with stews and curries!

Vegetable Fried Rice

This is a great Chinese take-out copycat dish! This recipe works best with leftover rice, because if you use freshly cooked rice it tends to clump up. If you want to make fresh rice for this dish however, just spread the hot rice onto a baking sheet and place in the freezer for about 20 minutes to cool completely. Then mix into the dish as directed.

Vegetarian Paella With Tofu

The addition of tofu to this traditional Spanish rice is very welcome! It is delicious and great as a large dish to entertain a crowd.

Makhloube (Rice with Eggplant and Pine Nuts)

This is a traditional Middle Eastern rice dish. Makloube directly translated to English means to flip over, that is because in this dish the eggplant is cooked under the rice and when ready to serve you flip over the dish allowing the eggplant to shine on top for a spectacular display!

Kitcheree (Red Lentil Rice)

This is known as a traditional Iraqi Jewish comfort food. It is usually served at lunch but it also makes a great dinner. Serve it warm with yogurt and Feta. It’s delicious.

Cardamom Scented Basmati Rice

The cardamom adds a flowery aroma to the rice which makes it feel special! If you are not used to the taste of cardamom, start off with half a teaspoon, but if you really want the cardamom taste to shine use the full teaspoon.

Mushroom and Asparagus Risotto

Risotto is a cooking method of slowly adding liquid to rice. It is a little time consuming but well worth it! The result is a decadently creamy dish.
