Maple Tahini Baked Eggplants

Schnitzel is a staple which was made popular in many Central European countries; it is usually from a slice of meat coated in bread crumbs. In this vegan version, thick slices of creamy eggplant are used for the center and coated in panko bread crumbs for a delightful outer crisp! Serve with a warm marinara sauce or a side salad if desired.

Aloo Baingan – Eggplant Potato and Chickpea Curry
Aloo Baingan is a classic Indian vegetable curry consisting of Eggplant (Baingan) and Potatoes (Aloo). This is a dish that can be eaten fresh but it is even better if you make it in advance as the flavors deepen as they sit. This makes it a perfect dish for a party so you are not stressing at the last minute. You can make it up to 3 days ahead, just keep it in an airtight container in the fridge until you are ready to use. Just before serving heat in the microwave or over the stove.

Asian Eggplant and Tofu Bowl
This is a delicious way of combining tofu and eggplant with a slightly Thai inspired sauce. You will notice that in the ingredients I mention that its better if the tofu has been frozen and defrosted. This changes the texture slightly, giving it a more “chicken” like feel. I generally buy lots of tofu when they are on sale and throw a few in the freezer for dishes like this. You can just then defrost in the microwave. In a pinch however, you can still create this dish with regular tofu cut into cubes.
Grilled Lemongrass Eggplant
This is a fun way to flavour the eggplant on the barbecue. Scoring the flesh of the eggplant helps the flavours infuse throughout the entire vegetable, making them absolutely succulent!
Babaghanouj (Lebanese Eggplant Dip)
An absolutely great classic Lebanese dip! For the authentic experience, serve with warm pita bread! It is also great with pita chips, crackers or fresh veggies. You will notice my trick here is to roast the garlic within the flesh of the eggplant. Since roasted garlic has a smoother flavour than raw, it is better in this dip. The eggplant serves as a great device to prevent the garlic from burning, while allowing itself to be infused with the delicious roasted garlic flavor!

Makhloube (Rice with Eggplant and Pine Nuts)
