Basic Mixed Bean Salad
This is a really nice recipe for a simple bean salad. It can be eaten as a lunch at the office or taken to a potluck or barbecue party. In this recipe I use cans of mixed beans, which is always available in grocery stores and usually contains about 5-6 varieties of beans. If you prefer however, you can always just mix and match any beans that you like!

The black beans make it a bit more substantial than the average salsa as they are full of protein and fibre! The mango and cilantro add a really fresh nice flavour. This recipe will give you about 3 cups of salsa. This salsa can be made up to 2 days in advance – store in an airtight container in the refrigerator.

This is a hearty and satisfying soup full of chopped fresh swiss chard and beans. I love using fresh swiss chard when it is in season, it adds so much flavour to anything you put it into!
Basic Balsamic Vinaigrette
This my go to salad dressing! I love the simplicity of it on nice fresh lettuce leaves, but it can also be used to dress bean salads or even a rice or couscous salad. Make a big jar of it and it will keep in an airtight container in the fridge for months- I always have a jar of this dressing in my refrigerator! I mix the recipe in a jar for simplicity – that way I can store it in the same jar, but if you prefer you can make it in a bowl and use a whisk to mix.
