Flavors of Morocco Budha Bowl

If you are not yet familiar with a Budha Bowl, it is a big bowl of healthy food that usually includes: a grain, a protein, lots of veg and a yummy sauce! This one is jam packed with flavors of Morocco, between the spiced crispy chickpeas, pickles turnips and couscous - all drizzled with an oh so creamy tahini sauce! Yum!

Red Quinoa and Edamame Budha Bowl

In this Budha Bowl, I use red quinoa – well... just because it’s so pretty! As well as protein packed edamame and of course avocado! Dig in...It’s good for you!

Salad Topped with Bean Sprouts and Baby Corn

This is a fun twist on a classic green salad. I find the bean sprouts and baby corn give it a slightly Asian twist, but also add lots of fun texture and flavor!

Kale & Sweet Potato Slaw with Cranberries and Pecans

This is a really hearty salad for any meal! And yes ... the sweet potato is added raw and it is delicious!! Bring this salad to your next potluck and you will be the hero! This will make a very large salad, but it will keep in the fridge for a few days if you have leftovers.

The saltiness of the feta pairs so beautifully with the sweetness from the watermelon! It is just delicious as a quick lunch or to knock your friends’ socks off at a summer barbecue! This dish is best assembled last minute, but you can prep all the ingredients a few hours before serving and just mix last minute. The watermelon is best cold in this dish, so try to keep it in the fridge before assembling.

Miso Beet and Quinoa Budha Bowl

I’m really into Budha Bowls lately! A giant bowl of food that usually starts with some grains, lots of veggies and some form of protein. In this one I use yellow beets as well as the greens attached to them and lots of chickpeas in a miso dressing. For the grains here I chose to mix my quinoa with bulgur as the combo is just super fluffy and nutty!

Corny Kale Chickpeas

This is a delicious and hearty lunch time salad. You can eat it hot or cold, but I have to say I really prefer eating it hot! If you are taking it for a lunch at the office, just place all the ingredients in a Tupperware and microwave when ready to eat.

An upscale lentil salad full of herbs and sundried tomatoes! Perfect for a picnic lunch or a bbq!

A great mix of so many superfoods! This simple dish will keep you full of energy all day!

Quinoa Black Bean Taco Bowl

I love these huge “bowls” for dinner! This one is Mexican inspired with hearty quinoa and black beans on top of crisp lettuce, creamy avocado and all topped with a chipotle lime sour cream!

Tofu Lettuce Cups

These are a really fun “assemble your own” type dinner. Put out the fresh lettuce, the delicious tofu filling and a few fun toppings such as hot sauce, peanuts and herbs. Let your guests assemble as they eat! Great for a relaxed lunch or a casual dinner get together.

Crunchy Udon Tahini Bowl

My husband and I went away for a long weekend and we just seemed to be eating junk food all weekend long! When we got back home we were both craving something healthy and filling– and that is how this dish came to be! You will notice that although there are noodles in the dish, it consists primarily of crunchy veggies – as you eat, the noodles get mixed so perfectly with the veggies and it feels so satisfying.

Sesame Date Broccoli Salad

This is a beautiful Middle Eastern twist on a broccoli salad. Adding toasted sesame seeds with the tahini gives you a double dose of sesame! I also love the sweet chew of the dates in contrast with the fresh crunchy broccoli! This salad is great to pack up for a picnic or bring to a potluck!

Quinoa Salad with Grilled Onions, Asparagus and Orange Segments

Quinoa is a super grain because it is one of the few foods that provides vegetarians with a complete protein. This salad is particularly nice because of the colour and texture contrasts. I find grilling the onions adds an extra element of flavour and the orange segments are really nice as they burst in your mouth!

Mexican Taco Salad

This is a really fun and filling dinner salad, and each person gets their own taco bowl! It may seem daunting since there are a lot of individual steps, but they come together fairly quickly and you can always prepare the individual components in advance and just assemble at the last minute.

Grilled Halloumi and Oyster Mushrooms over a bed of Baby Greens

This is one of my favourite salads! The gooey warm cheese and the meaty texture of the oyster mushrooms are just delicious!

Tastiest Tossed Salad with a Tahini Citrus Dressing

This salad has so many wonderful ingredients in it that provide amazing crunch and flavours. The creamy tahini dressing really ties it all together!
