Saffron Laced Chickpeas and Leeks -

This is a beautiful main course to really impress your guests! The saffron threads add such nice color to the dish while adding just a slight floral sweetness!

  • 1 Tsp. Vegetable oil
  • 2 Leeks, roughly chopped
  • 1 Clove Garlic, minced
  • 1 Tomato, diced
  • 2 Sprig Fresh Thyme
  • 6 Saffron Threads
  • 1/2 Cup Water
  • 1 Can Chickpeas, rinsed and drained
  • 1/2 Tsp. Sugar
  • Salt and Pepper to taste


  1. In a skillet over medium high heat, heat up the vegetable oil. Add in the chopped leeks, garlic, tomato, thyme and salt and pepper. Sauté for about 5 minutes until soft. Add in the saffron threads, (crushing slightly with your fingers as you add them in) as well as the water. Cook for 2 minutes more.
  2. Add the chickpeas and sugar and sauté for about 1 more minute. Taste for seasoning and add salt and pepper if needed.
