Roasted Garlic and White Bean Hummus - Vegetarian Gourmet
This is a change from the traditional chickpea hummus. I find white beans smoother tasting than chickpeas, therefore they pair beautifully with roasted garlic. Serve with pita chips or raw vegetables for dipping.
Roasted Garlic adds such a nice flavour to so many dishes. Its flavour is a lot less pungent than raw garlic, so you can add it in to all kinds of recipes. Once you learn this simple technique you will be adding it to so many foods!
Take an entire head of garlic and cut off the top inch of the garlic allowing the cloves to peek out. Drizzle with olive oil. Wrap the garlic bulb completely in foil and place on a baking sheet. Bake for 45 minutes in a preheated oven at 400 degrees. When you remove it from the oven, remove the foil and you will see you can squeeze the flesh out very easily. It will be a soft paste. This will store in the refrigerator for 1-2 weeks.
