Roasted Fennel and Chickpeas -

An amazing and filling vegetable dish! The fennel comes out nicely caramelized while the chickpeas are just slightly crisp!

Ingredients

  • 1 Bulb Fennel, frawns removed and sliced into about 1.2 inch slices
  • 1 Onion, peeled and sliced
  • 1 Can Chickpeas, rinsed and drained
  • 2 Sprigs Fresh Rosemary (Optional)
  • 3 Tbsp. Olive oil
  • 2 Tbsp. Balsamic Vinegar
  • 1 Large Pinch Each salt and Pepper

Preparation

  1. Preheat the oven to 400 F (205 C).
  2. Combine all ingredients in a large bowl and toss well.
  3. Place the mixture on a baking sheet lined with parchment paper. Be sure the vegetables are in a single layer.
  4. Bake at 400 for 35 – 40 minutes.
