Roasted Eggplant and Feta Pizza -

This is a pizza with a Mediterranean twist! Thick slices of creamy eggplant paired with the salty feta and Kalamata olives, is just divine!

  • 1 Basic Pizza Dough
  • 3 Round Italian Eggplants, sliced into rounds
  • 1 Tsp. Olive oil
  • 1 Tsp. Balsamic Vinegar
  • Salt and Pepper to taste
  • 1 Cup Marinara Sauce
  • 10 Kalamata Olives, pitted and halved
  • ¼ Cup Feta, Crumbled
  • 1 Cup Grated Mozzarella Cheese


  1. Preheat oven to 375F (190 C
  2. Toss the eggplant slices with the balsamic vinegar, olive oil, and a pinch of salt and pepper. Place on a parchment lined baking sheet and spread out in as evenly a layer as possible. Bake at 375 for 25 minutes.
  3. Prepare the basic pizza dough as instructed. Roll it out onto a round baking tray lined with parchment paper.
  4. Top with the marinara sauce, cheeses, grilled eggplant slices and olives.
  5. Bake at 375 for about 20 minutes.
