Rita’s Easy and Healthy Banana-Oatmeal Snacks -

This recipe comes from a close family friend, Rita. When she first told me about it, I was quite skeptical – in my mind there was no way these cookies would hold! Surprisingly however, despite the fact that they are missing the essential (and unhealthy) “cookie ingredients” such as flour, butter, sugar and eggs – they work, and are quite yummy I might add! Great for a breakfast on the go, or an after workout snack.

Ingredients

  • 2 Large Ripe Bananas
  • 1 Cup Oats
  • 1/4 Cup Toasted Walnuts
  • 1/4 Cup Raisins and/or Chocolate Chips (Optional)
  • 1/8 Tsp. salt
  • 1/4 Tsp. Cinnamon

Preparation

  1. Preheat oven to 300.
  2. In a large bowl, use a fork to mash the bananas. Add in all remaining ingredients and mix well.
  3. Place spoonfuls of the mixture on a parchment lined baking sheet.
  4. Bake at 300 for 20 minutes.
