Red Quinoa and Edamame Budha Bowl -

In this Budha Bowl, I use red quinoa – well... just because it’s so pretty! As well as protein packed edamame and of course avocado! Dig in...It’s good for you!

Ingredients

  • 2 Cups Mixed Greens of choice
  • 1 Cup Cooked Red Quinoa
  • 2 Cups Shelled Edamame Beans
  • 1 Avocado, peeled and sliced
  • 1 Beet, peeled and spiralized (you can also grate it if you don’t have a spiralizer)
  • ½ Cup Snow Peas, roughly chopped
  • ½ Cup Tahini Citrus Dressing

Preparation

  1. In a large bowl combine the mixed greens with 2 tablespoons of the dressing. Toss well. Divide among 2 big bowls (this is the base for your budha bowls).
  2. In the empty large bowl that you used to toss the greens, add the quinoa and toss with another 2 tablespoons of the dressing. Place a large heap of this dressed quinoa in the center, on top of the greens in your budha bowls.
  3. Arrange the beets, snow peas, avocado and edamame around the scoop of quinoa on top of your greens.
  4. Drizzle with remaining dressing and dig in!
