Veggie Paté -

Delicious on crackers or in a sandwich for lunch!

Ingredients

  • 2 Potatoes, Peeled and Quartered
  • 2 Carrots, Peeled and Chopped Roughly
  • 2 Stalks Celery, Chopped Roughly
  • 5 Mushrooms, Stemmed
  • 2 Large Onions, Peeled and Quartered
  • 1 Cup Toasted Walnuts
  • 1/2 Cup Nutritional Yeast
  • 1 Can Chickpeas, Drained and Rinsed
  • Juice and Zest of 1 Lime
  • 1 Tsp. each Salt and Pepper
  • 3 Garlic Cloves, Peeled
  • ¼ Cup Fresh Parsley
  • 1/4 Cup Fresh Mint
  • 1 Tsp. Dried Oregano
  • 2 Tbsp. Sriracha Hot Sauce
  • 1/4 Cup Whole Wheat Flour

Preparation

  1. Combine all ingredients except for the flour in a food processor and mix well until it becomes almost a paste. Add in the flour and process again.
  2. Put the mixture in a loaf pan and bake at 350 for 1 hour. Allow to cool completely before serving. Serve on crackers or toast.
