Tomato and Bulgur Pilaf -

Try this different method of cooking bulgur – it works as a beautiful side dish and brings out the natural nuttiness of the grain.

Ingredients

  • 1 Tbsp. Vegetable Oil
  • 1 Onion, peeled and diced finely
  • 2 cloves garlic, minced
  • 1 Jalapeño pepper, finely diced
  • 3 Roma Tomatoes, diced
  • 1 Tsp. Sugar
  • 1 Cup Medium Bulghur (number 3)
  • 1 ½ Cups Vegetable Stock or Water
  • 1 tsp. each Salt and Pepper, or to taste
  • 1 Tbsp Chopped Fresh Mint

Preparation

  1. In a medium sauce pan over medium high heat add the vegetable oil with the diced onion, garlic and jalapeño. Stir for about 1 minute.
  2. Add in the tomatoes and stir well. Cook for about 2 minutes more.
  3. Add the bulgur and stir to combine.
  4. Add the vegetable stock, salt and pepper. Bring to a boil.
  5. Cover and reduce heat to low. Cook for about 20 minutes or until tender.
  6. Stir in the chopped mint just before serving.
