Potato Latkes - 3 Ways!

I just love latkes! Potatoes, onions, deep fried - crispy deliciousness - how can you not love them!

What are latkes?

Latkes are a type of crispy potato pancake that are fried in lots of oil! They are traditionally enjoyed in Jewish homes during the festival of Hanukkah. Although, truthfully, they can be enjoyed absolutely any time of year as an appetizer or fun side dish.

Why do we eat Latkes?

The reason these fried treats are served at Hanukkah is to commemorate a miracle that took place over 2000 years ago, when Israel was part of the Syrian-Greek empire. Antiochus, the ruler of the time, did not want the Jewish people to have religious rights and freedoms. His army therefore tried to destroy the Jewish temple. The Jews were only able to salvage a few drops of oil which was enough to light the menorah for one night. By a miracle of God, the menorah stayed alight for 8 nights! This is why today, the Jewish people eat foods cooked in lots of oil such as latkes and doughnuts during this holiday to celebrate this miracle!

Below, are three latkes recipe variations.

The traditional recipe for latkes is mini pancakes made from potatoes and onions and then deep fried. I have also created a variation that mixes sweet potato with the potatoes for an extra boost of flavour. And finally, I decided to add a fun Southwestern twist by combining sweet potatoes with chipotle peppers. I find this smoked jalepeno pairs so nicely with the sweet potato and adds a fun kick!

While I have to admit I am partial to the traditional latkes as those are the ones I grew up with, I absolutely love the variations as well! Try them all out!
