Peanutty Cucumber “Noodle” Salad -

This is a great refreshing “noodle” salad – where the noodles are made entirely of ... cucumbers!! Really yummy without the guilt!

  • 2 English Cumbers
  • 1 Carrot, cut into matchsticks
  • 20 Snow Peas, sliced
  • 1 Scallion, sliced
  • 1 Red Pepper, cut into thin strips
  • 3/4 Cup Peanut Butter
  • 2 Tbsp. Rice Vinegar
  • 1 Tbsp. Soya Sauce
  • 1 Tsp. Maple Syrup
  • 2 Tbsp. Cashews, chopped roughly
  • ¼ Cup Fresh Cilantro, chopped


  1. To prepare the cucumbers, cut off both ends of the cucumbers and then cut each cucumber in half. Spiralize directly into a large colander sitting on top of a large bowl. Add a pinch of salt and allow to sit for about 20 minutes. This will release some of the water from the cucumbers ensuring that your final salad is crisp rather than mushy – however do not discard this liquid as we will be using it in the sauce!
  2. To make the sauce: use the liquid that came out of the cucumbers (you need ¾ cup of liquid so if you have more discard the excess and if you don’t have enough add some water to make 3/4 cup). Add to this liquid the peanut butter, soya sauce, rice vinegar and maple syrup. Use a whisk to mix well.
  3. Combine the cucumber noodles with all remaining ingredients and top with the sauce and toss well.
