Oh So Nutty Breakfast Bars -

These are a really crunchy breakfast or snack bar with all the goodness of nuts! I found it was easiest to make these bars in a pie plate with removable bottom. These bars store for up to 2 weeks in an airtight container. Makes about 12 bars.

  • 1 Cup Mixed Nuts (I used Almonds, Cashews and Hazelnuts)
  • 1/4 Cup Pumpkin Seeds
  • ¼ Cup Chopped and Pitted Dates
  • 1/2 Cup Cheerios
  • 1/2 Cup Oats
  • 1 Tbsp. Peanut Butter
  • 1/4 Cup Honey or Agave Syrup


  1. Preheat oven to 300 F (148 C).
  2. In a large bowl, combine the nuts, seeds, cheerios and oats.
  3. In a small saucepan over medium high heat combine the honey and peanut butter. Cook for 2-3 minutes until it starts to bubble slightly.
  4. Pour the boiling honey syrup over your nut mixture and mix very well.
  5. Press the mixture into a rectangular baking dish (you can use a rectangular pie plate with removable bottom, if you don’t have a dish with a removable bottom line with parchment paper) and bake at 300 for 20 minutes.
  6. Let cool completely and then cut into bars.
