Minestrone Soup -

This is a great hearty soup! Full of veggies, beans and pasta it’s a full meal in itself!

Ingredients

  • 1 Tsp. Vegetable oil
  • 1 Onion, Diced
  • 1 Tbsp. Garlic, Chopped
  • 2 Carrots, diced
  • 2 Stalks Celery, diced
  • 1 Potato, peeled and diced
  • 1 Turnip, peeled and diced
  • 1 Can Diced Tomatoes
  • 4 Cups Vegetable Stock or Water
  • ½ Cup Fresh Green Beans, halved
  • 1 Can Mixed Beans
  • ½ Cup fresh parsley, chopped
  • ½ Cup Fresh Dill, chopped
  • ½ Cup Mini Pasta (any shape you choose, I like mini shells or tubes)
  • 1 Tsp. Sriracha (Optional)
  • Salt and pepper to taste

Preparation

  1. In a pot over medium heat combine vegetable oil with the onions and garlic, and sauté for about 3 minutes. Add the carrots, potato, turnip, celery and tomato and continue to cook. Add the stock and bring to a boil. Cover and let cook for at least an hour.
  2. Add the green beans, canned beans, herbs, pasta, salt and pepper and sriracha. Cook for another 10 minutes and serve.
