Mexi- Mac ‘n Cheese -

Here is a fun twist on the classic Mac ‘n Cheese! This version is spiked with jalapeños and cilantro for a hint of Mexico!

  • 1 Small Onion, peeled and diced
  • 1 Jalapeño, finely diced
  • 3 Tbsp. Butter
  • 3 Tbsp. Flour
  • 3 cups milk
  • 1 Cup Grated Cheddar Cheese
  • 4 Cups Boiled Elbow Macaroni
  • 2 Tbsp. Fresh Cilantro, roughly chopped (Optional)
  • Salt and Pepper, to taste


  1. In a medium sauce pan over medium high heat, melt the butter and add the onions and diced jalapeños. Sauté for about 2 minutes, until soft. Add in the flour with a large pinch of salt and pepper and mix very well making sure it is well incorporated.
  2. Add in the milk about ¼ cup at a time, mixing well and bring to the boil after each addition. After all the milk is incorporated remove from heat and add the grated cheddar cheese. Mix well until it all melts.
  3. Add the cooked pasta to this sauce and mix well.
  4. Just before serving, sprinkle with the chopped cilantro, if desired.
