Lentil Kale Filo Pockets
This elegant dish can be served as a main course or appetizer to impress company! Make a big batch and freeze on a baking sheet overnight, and then transfer to freezer bags. They will last for about 6 months in the freezer. When you are having company, pop a couple out of the freezer and bake!
Roasted Eggplant and Feta Pizza

Roasted Tomato and Gruyere Tarts

Swiss Chard and Halloumi Frittata
This is a great meal for a light dinner, served with a side salad or roasted potatoes. It’s jam packed with greens and the halloumi adds a really nice salty contrast! I use a cast iron skillet here which makes a really nice presentation plus it is oven safe. If you don’t have one, just use a regular pan to sauté the veggies and then transfer into an oven safe baking dish and top with the eggs. Bake as directed.
Swiss Chard and Toasted Walnut Pizza
When swiss chard is in season make this pizza! It tastes so fresh and delicious! The little crunch from the walnuts adds such a nice surprise texture!

Curried Chickpea and Potato Pockets
This is like an Indian calzone! Curried potatoes and chickpeas are wrapped in a pizza dough and baked. A really a yummy treat for a snack or lunch! Make a big batch and freeze in resealable freezer bags. Just take them out as you need and enjoy! This recipe will make 8 pockets.

Sundried Tomato and Red Onion Pizza
A really simple topping to a delicious pizza!
Pizza Topped with Fresh Arugula and Parmesan Shavings
I created this recipe for my dad, as it is his absolute favourite pizza whenever we go out! Pizza dough is topped with a heap of fresh arugula and parmesan shavings, and lightly dressed with balsamic vinegar. It’s like having a pizza and salad all in one! For this recipe, I recommend getting a good quality block of parmesan cheese, not the pre-grated kind!

Spinach and Zaatar Crispy Tart
A great appetizer for a dinner party or a brunch item. Zaatar is a middleeastern spice mixture that contains thyme, sesame seeds and sumac. It is very flavourful!
