Roasted Red Pepper and Spinach Quesadillas
This is a fun idea as an appetizer for a casual get together! If roasting your own red peppers make sure they are big and fleshy otherwise they won’t roast well. I like to buy a huge batch of peppers at the end of the summer when they are available in abundance in the farmer’s markets and roast them all. They can be frozen and you have roasted peppers all year for dishes such as this one! You can also buy roasted peppers in a jar for convenience; they are good, but definitely not as good as doing them yourself!
