Couscous Salad with Cherry Tomatoes and Basil
This is a nice refreshing way of serving a couscous salad, what doesn't go with tomatoes and basil? It’s great for a potluck or a barbecue.
Curried Chickpea and Potato Pockets
This is like an Indian calzone! Curried potatoes and chickpeas are wrapped in a pizza dough and baked. A really a yummy treat for a snack or lunch! Make a big batch and freeze in resealable freezer bags. Just take them out as you need and enjoy! This recipe will make 8 pockets.
Sesame Date Broccoli Salad
This is a beautiful Middle Eastern twist on a broccoli salad. Adding toasted sesame seeds with the tahini gives you a double dose of sesame! I also love the sweet chew of the dates in contrast with the fresh crunchy broccoli! This salad is great to pack up for a picnic or bring to a potluck!
Cucumber Sesame Salad
This is a really nice refreshing picnic basket salad! For this salad I used a spiral veggie slicer to get the cucumbers so thin. If you do not have one, you can use a mandolin or just a very sharp knife and slice as thinly as possible. This salad can keep in an airtight container in the refrigerator for up to 1 week.
Easy Paprika Chickpeas
This is one of my favourite quick snacks or lunches. It requires almost no effort and is super tasty and healthy!
Basil and Corn Salad
This is a really simple salad to put together, but the sweetness of the flavour combination will surprise you! Serve this at a barbecue party or take it to work for a delicious lunchbox salad. In this recipe I used canned corn, but if you have fresh corn available feel free to use that instead – just be sure to cook it first.
Basic Mixed Bean Salad
This is a really nice recipe for a simple bean salad. It can be eaten as a lunch at the office or taken to a potluck or barbecue party. In this recipe I use cans of mixed beans, which is always available in grocery stores and usually contains about 5-6 varieties of beans. If you prefer however, you can always just mix and match any beans that you like!
Tomato, Lentil and Cabbage Soup
This is a hearty soup that I love on a cold winter night! Because this soup uses dried lentils, the salt is only added at the end – if you add it earlier, the lentils likely won’t soften – this also means if you are using a vegetable stock use a low sodium one.
Creamy Leek and Celery Root Soup
This is a great alternative to the classic leek and potato soup. Celery root is much healthier than potatoes and it has such a soft and creamy flavour. It is a bit of a weird looking vegetable, but don’t be scared of it – it’s delicious!

Classic Middle Eastern Lentil Soup
This is a recipe for the traditional Middle Eastern lentil soup. It is one of my favourite comfort food recipes! Full of lentils and veggies and flavoured with cumin and coriander seeds, just an overall delicious soup! Although I usually encourage you to season with salt throughout your cooking, in this recipe it is important to not add the salt until the very end. The reason is because I use dried lentils, and they will not soften if you add salt at the beginning!
Swiss Chard, Red kidney Bean and Tomato Soup
This is a hearty and satisfying soup full of chopped fresh swiss chard and beans. I love using fresh swiss chard when it is in season, it adds so much flavour to anything you put it into!

This recipe is great for an afternoon snack on crackers, or to top a big salad for lunch. I like to make lots of it since you can store in an airtight container in the fridge for up to 2 weeks.

Faux Lox – Vegan Smoked Salmon
This has the texture and taste of actual smoked salmon. I was even able to fool a few fish eaters into believing it was the real thing! Serve it on a bagel with cream cheese (vegan cream cheese works well), sliced red onion and a few sprigs of fresh dill.
Mushroom Cabbage and Barley Soup
I find this soup to be extremely comforting and hearty! The deep flavours of mushrooms bring this soup to life, and with the added healthy grain barley, this soup is a super meal!

This is a delicious tomato based soup, with fresh leeks and other veggies. I find adding rice makes it a hearty meal!
