Grilled Polenta with Roasted Tomatoes and Basil
This is a great appetizer to serve when hosting a casual get together! Put out the cubes of polenta with a nice bowl of roasted tomatoes and let your guests top their polenta bites with the beautifully caramelized morsels of tomatoes! You can make the roasted tomatoes up to 1 week in advance. The polenta can be made a couple of days before, but cut and bake just before your guests arrive.
Penne with Roasted Tomatoes, Eggplant and Feta
I love the idea of roasting the tomatoes and eggplant as a sauce. Not only is it an amazing way to bring out the natural sweetness in the vegetables but it also makes the dish so quick and easy to prepare!

Oven Roasted Tomatoes
These tomatoes are absolutely delicious! The flavours are full bodied, caramelized and crazy sweet! You can eat them as a side dish on their own or serve with a nice piece of baguette or even use them to top pastas and sandwiches. I like to make a big batch when tomatoes are in season and freeze in resealable bags. You can just pop a few out as you need in the winter!
Grilled Garlic Basil Polenta
I have to admit I have been avoiding making polenta for the longest time – it just seemed overwhelming! Turns out, it is really easy to make and absolutely delicious, especially if you grill it like this. It becomes creamy with just a slight crispy crust. If you do not want to use a barbecue feel free to grill it on an indoor grill or cast iron skillet.

A really simple topping to a delicious pizza!
Pizza Topped with Fresh Arugula and Parmesan Shavings
I created this recipe for my dad, as it is his absolute favourite pizza whenever we go out! Pizza dough is topped with a heap of fresh arugula and parmesan shavings, and lightly dressed with balsamic vinegar. It’s like having a pizza and salad all in one! For this recipe, I recommend getting a good quality block of parmesan cheese, not the pre-grated kind!
Baked Ricotta with Lemon Zest and Thyme
This is great as an appetizer to serve with pita chips or baguette slices for dipping.
Fig and Mascarpone “Amuse-Bouche”
Amuse Bouche is French for small bites, it literally translates to amuse your mouth and that is what this dish does! It is so simple yet so elegant and delicious!

In this recipe finely chopped veggies and TVP are combined to make a hearty Bolognese sauce! If you prefer not to use the TVP, that’s fine – the veggies are hearty and delicious enough on their own!
Insalata Caprese (Tomato and Bocconcini Salad)
This is a very classic Italian appetizer salad, made up of sliced tomatoes, basil and fresh mozzarella or bocconcini cheese.
