Grilled Polenta with Roasted Tomatoes and Basil

This is a great appetizer to serve when hosting a casual get together! Put out the cubes of polenta with a nice bowl of roasted tomatoes and let your guests top their polenta bites with the beautifully caramelized morsels of tomatoes! You can make the roasted tomatoes up to 1 week in advance. The polenta can be made a couple of days before, but cut and bake just before your guests arrive.

Turns out, it is really easy to make and absolutely delicious, especially if you grill it like this. It becomes creamy with just a slight crispy crust.
