Herbed Quinoa with Chickpeas and Walnuts -

A really nice refreshing quinoa salad! Full of fresh herbs this is a great salad for a potluck or to serve as a grain with any meal!

Ingredients

  • 2 Cups Cooked Quinoa
  • ½ Cup Chickpeas
  • ¼ Cup Fresh Dill, chopped
  • ¼ Cup Fresh Parsley, chopped
  • ¼ Cup Carrots, grated
  • 2 Tbsp. Fresh Lemon Juice
  • 1 Tbsp. Olive Oil
  • ¼ Cup Toasted Walnuts, roughly chopped
  • Salt and Pepper to Taste

Preparation

  1. In a large bowl combine all ingredients and toss well.
