Be sure to keep the liquid even after the pears are eaten – it is great to sweeten up your morning smoothies!

Vegan Zucchini Date Bread

A really great healthy zucchini bread with no added oil! There is lots of zucchini in here to give it the moisture needed and the pure maple syrup doesn’t hurt either! This bread is perfect for a healthy breakfast or afternoon treat. It will store on the counter for 3-4 days or slice it up and freeze for about 6 months.

Avocado Banana Smoothie Bowl

A smoothie bowl is the new food fad right now and I can certainly understand why! It is a really thick smoothie that you need to eat with a spoon, and a bonus is you can top it with whatever you like! Kind of a cross between a smoothie and a bowl of ice cream! The avocado in this one makes it super creamy and delicious – really addictive!

Oh So Nutty Breakfast Bars

These are a really crunchy breakfast or snack bar with all the goodness of nuts! I found it was easiest to make these bars in a pie plate with removable bottom. These bars store for up to 2 weeks in an airtight container. Makes about 12 bars.

Frozen Yogurt Candies

A really great guilt free dessert or snack! After you unmold them you can freeze in a Ziploc bag for up to a month. This recipe should give you about 24 yogurt candies.

Dark Chocolate Almond Treats

These little dessert treats are so special! The crunchy almonds underneath the smooth dark chocolate is just divine! When baking with nuts its always important to use good quality nuts and toast them to bring out their flavor. I suggest using a chocolate mold which can be purchased at a baking supply store to make the pretty flower shapes. You can also use a silicone ice cube tray. If you want to make these in advance, pop them out of the molds once set and place in an airtight container in the freezer for up to 3 months. This recipe will give you about 36 chocolate treats.

Spiralized Shoe String Potatoes

These are crazy addictive!! They come out super crispy and tasty – from the oven – no deep frying necessary! You will need a spiralizer to create the shoe string effect here.

Spicy Ginger Edamame

Edamame are soy beans sold frozen in their pods. Thye are often served in Japanese restaurants as a starter sprinkled with sea salt. I thought it would be fun to spice them up a bit!

Zucchini Muffins

This is a great guilt- free muffin for breakfast or as an afternoon snack! Because of all the fresh zucchini, these muffins are extremely moist – you won’t believe that there is no oil in them whatsoever! This recipe makes 15 muffins; you can store them in a re-sealable bag in your freezer for up to 6 months.
