Frozen Coconut Pineapple -

A great simple and healthy treat for breakfast, dessert or after workout snack! After you make these treats, store in a Ziploc or airtight container in the freezer for up to 2 months. Take one out whenever you have a craving for a guilt free treat!

Ingredients

  • 1 Medium Pineapple, peeled
  • 1 Cup Toasted Shredded Coconut

Preparation

  1. Cut the pineapple into long wedges and place a skewer through the center of each wedge vertically.
  2. Spread out toasted coconut on a flat surface and dip the pineapple skewers into the coconut to coat all around.
  3. Place the coated pineapple skewers on a plate or baking sheet and freeze for at least 2 hours. Once frozen, you can place any leftovers in a Ziploc bag and freeze for up to 2 months.
