Faux Lox – Vegan Smoked Salmon -

This has the texture and taste of actual smoked salmon. I was even able to fool a few fish eaters into believing it was the real thing! Serve it on a bagel with cream cheese (vegan cream cheese works well), sliced red onion and a few sprigs of fresh dill.

Ingredients

  • 2 Carrots
  • 2 Tbsp. Miso Paste
  • 1 Tsp. Liquid Smoke
  • 2 cloves Garlic
  • 3 cups Water
  • 1 Sheet Nori

Preparation

  1. Use a vegetable peeler to cut the carrots into very thin strips lengthwise from top to bottom. Place the carrot strips in a small baking dish.
  2. Combine all remaining ingredients in a blender and blend into a paste. Pour over carrots.
  3. Cover the baking dish with a tight layer of aluminum foil.
  4. Bake at 400 for about 10 minutes. Reduce oven temperature to 200 and bake for about 45 minutes.
  5. Remove from oven. Remove carrot strips from the broth and refrigerate in an airtight container for at least an hour (or overnight) before serving.
