Creamy Carrot Salad
This is a lightened up version classic creamy carrot salad! The raisins add little bits of sweetness which balances with the tang from the lemon juice!
Creamy Avocado & Cucumber Smoothie
Wow! This is one of the best smoothies I have ever had! The avocado makes it lusciously creamy while the cucumber adds bursts of refreshment!
Balsamic Beet and Carrot Salad
This is a really nice light and refreshing simple salad! The addition of raw beets in this salad adds a touch of sweetness and lots of crunch!
Couscous Salad with Cherry Tomatoes and Basil
This is a nice refreshing way of serving a couscous salad, what doesn't go with tomatoes and basil? It’s great for a potluck or a barbecue.
Sesame Date Broccoli Salad
This is a beautiful Middle Eastern twist on a broccoli salad. Adding toasted sesame seeds with the tahini gives you a double dose of sesame! I also love the sweet chew of the dates in contrast with the fresh crunchy broccoli! This salad is great to pack up for a picnic or bring to a potluck!
Easy Paprika Chickpeas
This is one of my favourite quick snacks or lunches. It requires almost no effort and is super tasty and healthy!
Basil and Corn Salad
This is a really simple salad to put together, but the sweetness of the flavour combination will surprise you! Serve this at a barbecue party or take it to work for a delicious lunchbox salad. In this recipe I used canned corn, but if you have fresh corn available feel free to use that instead – just be sure to cook it first.
Basic Mixed Bean Salad
This is a really nice recipe for a simple bean salad. It can be eaten as a lunch at the office or taken to a potluck or barbecue party. In this recipe I use cans of mixed beans, which is always available in grocery stores and usually contains about 5-6 varieties of beans. If you prefer however, you can always just mix and match any beans that you like!
Fresh Mango and Cilantro Salsa
This is a great and refreshing salsa to serve over tacos or enchiladas. It is also great as a dip with tortilla chips to be served as an appetizer when you have company over.2. This salsa can be made up to 2 days in advance – store in an airtight container in the refrigerator.
Black Bean and Mango Salsa
This is a great salsa to serve over tacos or enchiladas or even as a dip with tortilla chips. The black beans make it a bit more substantial than the average salsa as they are full of protein and fibre! The mango and cilantro add a really fresh nice flavour. This recipe will give you about 3 cups of salsa. This salsa can be made up to 2 days in advance – store in an airtight container in the refrigerator.
Chopped Tofu Spread
This recipe is great for an afternoon snack on crackers, or to top a big salad for lunch. I like to make lots of it since you can store in an airtight container in the fridge for up to 2 weeks.
Fresh basil and strawberries are just such a beautiful and refreshing combination in this delicious breakfast drink!
Rita’s Easy and Healthy Banana-Oatmeal Snacks
This recipe comes from a close family friend, Rita. When she first told me about it, I was quite skeptical – in my mind there was no way these cookies would hold! Surprisingly however, despite the fact that they are missing the essential (and unhealthy) “cookie ingredients” such as flour, butter, sugar and eggs – they work, and are quite yummy I might add! Great for a breakfast on the go, or an after workout snack.
Basic Couscous Recipe
Couscous makes a great side dish to serve with veggies, but there are just so many different ways to prepare couscous out there – some involving a double boiler and a couscousiere. If you are looking for a really simple method that works great every time try this one out!
Colourful Spring Salad
This salad is a great side salad for a barbecue because of the vibrant colours and fresh crunch it offers. It can also be nice to pack for a lunchtime healthy meal.
Chocolate Banana Smoothie
A healthy breakfast on the go that tastes just like a chocolate milkshake – sign me up!
Simple Strawberry Sorbet
This sorbet is so refreshing and light for a summer evening. I use frozen strawberries for this recipe not only because of its ease, but also because in order to achieve the proper texture of the sorbet the fruit must be frozen first. If you have a lot of fresh strawberries, you can always wash and hull them (remove stem) and stick them into the freezer the night before you prepare the recipe.
Chia Seed Pudding
This pudding is so cool to make! Chia seeds, the latest superfood, start out so tiny and literally drink up all the milk. The end product is something really similar in texture to a tapioca pudding. In this recipe, I chose to go easy on the sweetness to keep it really healthy. If you are serving it for dessert you may want to double up on the maple syrup, whereas if you are having it for breakfast or an after workout snack I would keep it as is and top with some fresh berries.
Cheater Breakfast Potatoes
These potatoes remind me so much of the potatoes you get in restaurants on the side of your omelette. This quick version uses poultry seasoning to spice them up. Poultry seasoning is a blend of spices such as dehydrated garlic, onions, paprika and salt. It’s a great cheat!
Fusilli with Fresh Tomatoes and Basil
A delicious light fresh tasting pasta. It is especially great in the summer when the tomatoes and basil are fresh and abundant!
