This is a beautiful Middle Eastern twist on a broccoli salad. Adding toasted sesame seeds with the tahini gives you a double dose of sesame! I also love the sweet chew of the dates in contrast with the fresh crunchy broccoli! This salad is great to pack up for a picnic or bring to a potluck!

This is an amazingly satisfying lunch, served on its own. It can also be served with some pita chips or crackers as a fun appetizer for company.

This is a really nice recipe for a simple bean salad. It can be eaten as a lunch at the office or taken to a potluck or barbecue party. In this recipe I use cans of mixed beans, which is always available in grocery stores and usually contains about 5-6 varieties of beans. If you prefer however, you can always just mix and match any beans that you like!

Black Bean and Mango Salsa

This is a great salsa to serve over tacos or enchiladas or even as a dip with tortilla chips. The black beans make it a bit more substantial than the average salsa as they are full of protein and fibre! The mango and cilantro add a really fresh nice flavour. This recipe will give you about 3 cups of salsa. This salsa can be made up to 2 days in advance – store in an airtight container in the refrigerator.

Tzaziki

A great Greek dip for veggies or as a sandwich spread! This dip will last up to 1 week in an airtight container in the refrigerator. In fact it is even better the next day.

Chopped Tofu Spread

This recipe is great for an afternoon snack on crackers, or to top a big salad for lunch. I like to make lots of it since you can store in an airtight container in the fridge for up to 2 weeks.

Surprisingly however, despite the fact that they are missing the essential (and unhealthy) “cookie ingredients” such as flour, butter, sugar and eggs – they work, and are quite yummy I might add! Great for a breakfast on the go, or an after workout snack.
