Tarte Tatin is a French dessert where the fruit is cooked underneath the pastry, in order to serve it is flipped over. In this version I use fresh figs which caramelize beautifully! Muffin tins are used here to create individual tarts. You can serve them for dessert or even as a first course for a formal brunch. : if you are preparing these deserts in advance, prepare steps 1-4 up to the day before. Cover tightly with plastic wrap and refrigerate. Just before serving complete steps 5 and 6 (if it has been refrigerated – it should cook for 20-25 minutes instead).This recipe will give you 12 tarts.

This is such an elegant and simple desert, but your guests will be so impressed. If you have never had fresh figs before, they are just so tender and fragrant. I find the honey really brings out their natural sweetness.
Simple Strawberry Sorbet
This sorbet is so refreshing and light for a summer evening. I use frozen strawberries for this recipe not only because of its ease, but also because in order to achieve the proper texture of the sorbet the fruit must be frozen first. If you have a lot of fresh strawberries, you can always wash and hull them (remove stem) and stick them into the freezer the night before you prepare the recipe.

This pudding is so cool to make! Chia seeds, the latest superfood, start out so tiny and literally drink up all the milk. The end product is something really similar in texture to a tapioca pudding. In this recipe, I chose to go easy on the sweetness to keep it really healthy. If you are serving it for dessert you may want to double up on the maple syrup, whereas if you are having it for breakfast or an after workout snack I would keep it as is and top with some fresh berries.
