Couscous Salad with Cherry Tomatoes and Basil -

This is a nice refreshing way of serving a couscous salad, what doesn't go with tomatoes and basil? It’s great for a potluck or a barbecue.

  • 4 cups Medium Grain Couscous
  • 1 Small Red Onion, Diced
  • 10 Cherry Tomatoes, halved
  • 1 Cucumber, diced
  • ½ Cup Fresh Basil, roughly chopped
  • Juice of 1 Fresh Lemon
  • 1/4 Cup Olive oil
  • Salt and Pepper to taste


  1. Place the couscous in a large bowl, and add warm water just to cover the grain. Allow to sit for about 20 minutes. The water will absorb completely.
  2. Meanwhile prepare all remaining ingredients.
  3. Use a fork to comb through the couscous that has been absorbing the water. Keep combing through until nice and fluffy.
  4. Add all remaining ingredients and mix well.
