Colourful Spring Salad -

This salad is a great side salad for a barbecue because of the vibrant colours and fresh crunch it offers. It can also be nice to pack for a lunchtime healthy meal.

  • 1 Large Red Pepper, cut into large chunks.
  • 1 Yellow Pepper, cut into large chunks
  • 20 Cherry Tomatoes, halved
  • 1 Red Onion, peeled and sliced
  • 2 Cucumbers, cut into chunks
  • 1 Avocado, cut into chunks
  • 2 Tbsp. Olive oil


  1. In a large bowl combine all ingredients and mix well.
