It's Christmas morning. The tree has been decorated, the gifts have been opened and you are still full from the huge feast you had last night! But wait, the in-laws are coming over this morning for brunch! What to do?
Have no fear here are some ideas for a light but elegant brunch menu for all!
It's always nice to serve a drink to start the meal. Chances are there was a lot of alcohol and heavy food last night, so I recommend serving up some nice smoothies to start this meal. Try one of these delicious smoothie recipes.
As guests are sipping away at their smoothies, continue the meal by putting out a nice basket of Feta-sundried tomato muffins as well as a Caramelized Onion and Goat Cheese Tart.
To finish off the meal, it is always nice to serve fruit with breakfast. Give each person a plate with a Cardamom Infused Poached Pear and a large dollop of Greek yogurt (be sure to keep some of the poaching liquid to mix into the yogurt). This works as both the dessert and fruity portion of your breakfast!
For this menu, most items can be prepared in advance which I know is really important when hosting around the holidays!
The muffins can be prepared as much as a month in advance and frozen in resealable bags. Remove from freezer, 2-3 hours before serving and bake at a 300 F for about 10 minutes - they will be warm and feel freshly baked!
The tart can be prepared a couple of days in advance, wrapped tightly in aluminum foil in the refrigerator. Remove from the fridge and place it in the oven at the same time as the muffins - 10 minutes in a 300 degree oven.
The poached pears can be prepared up to a week in advance, keep the pears with the poaching liquid in an airtight container in the refrigerator. Just remove from fridge and serve.
Finally the smoothie can be prepared the day before. I suggest keeping it in the blender jar and storing the jar in the refrigerator overnight. Just as guests arrive, place jar on the blender and blend again so it is nice and smooth before serving.
