Chocolate Coconut Bars -

These are just crazy delicious. As you bite into that dark chocolate exterior you get the creamy coconut interior...mmmm! They will also keep really well in the freezer in an airtight container for about 6 months. So make a big batch and pop a few out when you have company! This recipe will give you 12 large or 20 small treats.

  • 250 ml Coconut Cream
  • 2 Tbsp. Sugar or Agave
  • 1/4 Tsp. Vanilla Extract
  • 1 Pinch salt
  • 2 cups Unsweetened Shredded Coconut
  • 2 cups Dark Chocolate Chips


  1. In a saucepan over medium heat, combine the coconut cream with the sugar and heat just until sugar dissolves (about 5 minutes). Reduce heat to low. Add in the salt, vanilla and shredded coconut. Cook for another 10 minutes, until most of the liquid had evaporated.
  2. Spread the hot coconut mixture in a square baking dish and immediately place in the freezer for about 1 hour just to set up. Remove from freezer and form balls or logs with your hands. Place on a baking sheet and put back in the freezer for another 30 minutes.
  3. Meanwhile melt the chocolate. Place chocolate chips in a microwave safe bowl and microwave on high for about 2 minutes, stirring every 30 seconds until completely melted.
  4. Dip balls in the chocolate and place back on the baking sheet. Allow to cool completely until chocolate is set.
