Chinese Broccoli and Bok Choy in Black Bean Sauce -

This is a great stir fry similar to what you would find in a Chinese restaurant. You may need to go to an Asian grocery store to find the Chinese Broccoli. Since this dish needs to be served immediately I like to wash and chop all my ingredients in advance and just as I am about to serve I make the stir fry.

Ingredients

  • 1 Tbsp. Vegetable oil
  • 1 Onion
  • 1 inch piece Fresh Ginger, sliced very thinly
  • 1 Thai Chilli, Chopped Finely
  • 2 Cloves Garlic, Sliced Finely
  • 10 King Oyster Mushrooms, chopped
  • 2 cups Chinese Broccoli, Chopped (stems and leaves separated)
  • 1 Head Bok Choy, chopped
  • 2 Tbsp. Soya Sauce
  • 1 Tsp. Sesame Oil
  • 3 Tbsp. Black Bean Sauce
  • 3 Tbsp. Vegetable Stock

Preparation

  1. In a wok over high heat, add the oil and allow to heat up. Once the oil is hot add in the onions, ginger, chili and garlic. Cook for 1 minute stirring constantly
  2. Add the broccoli stems. Cook for about 5 minutes, stirring constantly until tender.
  3. Add in the bok choy and broccoli tops and stir again for another minute. Add all remaining ingredients and mix well. Cook for another minute and serve immediately.
