Cheesy Spinach Strata -

This is a great recipe for a brunch gathering! Bread, cheese, eggs and veggies – what more could you want!

  • 1 Tbsp. Butter (plus more for brushing)
  • 1 Onion, peeled and diced
  • 2 Cloves Garlic, minced
  • ¼ Tsp. Ground Nutmeg
  • 1 Cup Frozen Spinach
  • Salt and Pepper to Taste
  • 1 Baguette
  • 8 Eggs
  • 1/2 Cup milk
  • 1 Cup Grated Mozzarella


  1. In a skillet over medium heat, heat the tbsp. of butter and add the onions and garlic. Sauté for 2 minutes. Add the spinach and nutmeg with a large pinch of salt and pepper. Sauté for 2 minutes more. Place mixture in a large bowl and allow to cool.
  2. Preheat oven to 350 F (175 C).
  3. Meanwhile, brush a 9 x 13 inch casserole dish with butter. Tear the baguette into bite sized pieces and place them in the casserole dish.
  4. Add the eggs and milk to the spinach mixture that is now cooled and mix very well. Pour this mixture over the baguette slices in the casserole dish and toss. Top with the grated mozzarella.
  5. Bake at 350 for 30-40 minutes, until eggs are completely set and the cheese is bubbly.
