Broccoli and Chickpea Stir Fry -

These little chickpeas, although slightly unconventional in a stir fry are simply perfect! They crisp up ever so slightly which combines just right with the beautiful green broccoli!

Ingredients

  • 1 Tsp. Sesame Oil
  • 1 Onion, peeled and sliced
  • 1 Tbsp. Fresh Ginger, minced
  • 1 Can Chickpeas, rinsed and drained
  • 2 Tbsp. Soya Sauce
  • 1 Head Broccoli, Chopped
  • 2 Tbsp. Water
  • 1 Tbsp. Balsamic Vinegar
  • 1 Tsp. Sriracha (Optional)

Preparation

  1. In a skillet or wok over medium high heat, add the sesame oil with the onions and ginger. Cook for 1 minute stirring constantly.
  2. Add in the chickpeas and sauté for about 2 minutes more, until the chickpeas toast slightly. Add in the balsamic vinegar and sauté for 1 more minute.
  3. Add all remaining ingredients and sauté for 5 minutes until the broccoli is tender and the water has evaporated.
