Rita’s Easy and Healthy Banana-Oatmeal Snacks
This recipe comes from a close family friend, Rita. When she first told me about it, I was quite skeptical – in my mind there was no way these cookies would hold! Surprisingly however, despite the fact that they are missing the essential (and unhealthy) “cookie ingredients” such as flour, butter, sugar and eggs – they work, and are quite yummy I might add! Great for a breakfast on the go, or an after workout snack.
Chocolate Banana Smoothie
A healthy breakfast on the go that tastes just like a chocolate milkshake – sign me up!
Cardamom Infused Poached Pears
This is such a simple, but elegant treat! It is especially nice for a dinner or brunch gathering as everyone can get their own poached pear. You can serve it on its own or with a scoop of vanilla ice cream or even some yogurt if you are having it for breakfast! If you would like to save these pears for a few days, store them with the liquid in an airtight container in the fridge for up to 2 weeks. You can also save the poaching liquid to sweeten up yogurt, or some freshly made iced tea.
Kale and Green Apple Smoothie
I like to call this super juice my green power machine! Although it is so healthy, it is really delicious at the same time! If you want the juice to be completely smooth, strain it in a fine mesh strainer before drinking, but I kinda like the pulp from the kale and apples.
Chia Seed Pudding
This pudding is so cool to make! Chia seeds, the latest superfood, start out so tiny and literally drink up all the milk. The end product is something really similar in texture to a tapioca pudding. In this recipe, I chose to go easy on the sweetness to keep it really healthy. If you are serving it for dessert you may want to double up on the maple syrup, whereas if you are having it for breakfast or an after workout snack I would keep it as is and top with some fresh berries.
Cheater Breakfast Potatoes
These potatoes remind me so much of the potatoes you get in restaurants on the side of your omelette. This quick version uses poultry seasoning to spice them up. Poultry seasoning is a blend of spices such as dehydrated garlic, onions, paprika and salt. It’s a great cheat!
Spinach and Zaatar Crispy Tart
A great appetizer for a dinner party or a brunch item. Zaatar is a middleeastern spice mixture that contains thyme, sesame seeds and sumac. It is very flavourful!
Apple Cherry Strudel
Strudels are a great desert since they are light, crispy and full of fruit goodness! This one is made with filo dough which can be found in the freezer section of most regular grocery stores. When working with filo you should defrost it in the refrigerator overnight.
Elegant Pear and Nectarine Tart
As the name suggests, this desert is a beautiful addition to any sweet table, yet it is so simple to put together!
