Swiss Chard and Halloumi Frittata

This is a great meal for a light dinner, served with a side salad or roasted potatoes. It’s jam packed with greens and the halloumi adds a really nice salty contrast! I use a cast iron skillet here which makes a really nice presentation plus it is oven safe. If you don’t have one, just use a regular pan to sauté the veggies and then transfer into an oven safe baking dish and top with the eggs. Bake as directed.

Beth Al Tbeet (Iraqi Brown Eggs)

This is a very traditional breakfast or lunch, usually served on Saturday for Iraqi Jews. The eggs get their dark brown color and deep flavour by cooking for many hours. Traditionally these eggs were slow cooked in the oven with a chicken dish known as Tbeet (hence the name!). Here in my modern vegetarian version, I cook them in a crock pot with an onion to enhance the color and flavor.


This is a classic Tunisian breakfast dish, where eggs are poached in a slow cooked tomato sauce. This dish can be eaten any time of day! I love it as a light dinner in the summer, served with some nice fresh bread for dipping. In this recipe I used a can of diced tomatoes, but if you are making this in summer when fresh tomatoes are abundant feel free to use those instead!

Scrambled Egg Wrap

This is a different way of making a classic egg sandwich – instead of hard boiling the eggs, here they are scrambled. I find they are a little lighter this way.

Tortilla Espagnola – Spanish Tortilla

In this popular Spanish breakfast dish – Tortilla is translated to omelette, usually made with potatoes and egg. I like to add sweet potato for a really nice contrast, everything bakes until slightly souffléed and golden brown! Note that if you want a nice presentation on this tortilla, you may want to use a pie plate with a removable bottom, but if you do, make sure to place it on a baking sheet before pouring the egg mixture in - otherwise you will have egg everywhere!

Curried Spinach and Egg Sandwich Tortilla

Spinach and eggs team up for a punch of protein in this quick and tasty breakfast or lunch on the go! You could eat it right away, or refrigerate for a lunchbox treat the next day. If you are eating the next day you have 2 options: either eat it cold (which is yummy!) or if you prefer it warm (also yummy!) do not put the sliced cucumbers in the sandwich, pack them on the side. When you are ready to eat, place your wrap in the microwave for 1 minute and then stick the slices of cucumber in as you eat.

Simple Egg “Veg”Muffin!

This is a really easy recipe to put together for a quick breakfast on the go or even a lunch sandwich. When creating this recipe, I wanted to replicate the feel of the famous fast food sandwiches that we are all used to – you know what I am talking about! That is why I came up with this trick of microwaving the egg – it really works! When you take your egg out of the microwave, use a fork to loosen the egg from the edges and then pull it out of the bowl in one shot, it will come out in one piece, round and fluffy! Give it a try!

Quick Mexican Breakfast Scramble

A breakfast scramble is like an omelette that is all mashed up! I actually prefer a scramble to an omelette because it feels more casual and comforting. Another great thing about it, is that you don’t have to be a chef to make a scramble – just mash everything together and there you have breakfast!

Cheater Breakfast Potatoes

These potatoes remind me so much of the potatoes you get in restaurants on the side of your omelette. This quick version uses poultry seasoning to spice them up. Poultry seasoning is a blend of spices such as dehydrated garlic, onions, paprika and salt. It’s a great cheat!

A frittata is basically a crust-less quiche making it a much healthier dinner option. This one is a great way to get tons of broccoli and eggs into your kids without the fat from the crust!
