Black Bean Soup -

This is a traditional Cuban comfort food recipe. The chipotle pepper adds a nice smokey and spicy flavour. I like to serve it along with bowls of chopped cilantro, onions, sour cream and tortilla chips and allow each person to top their own bowl.

Ingredients

  • 1 tsp. Vegetable Oil
  • 2 Onions
  • 2 Garlic Cloves
  • 1 Tbsp. Ground Cumin
  • 2 Cans Black Beans
  • 2 Cups Vegetable Stock or Water
  • 1 Chipotle Pepper in Adobo Sauce
  • Salt and Pepper to Taste

Preparation

  1. In a medium pot over medium heat, sauté the onions and garlic with the vegetable oil until soft (about 2 minutes).
  2. Finely chop the chipotle pepper and add it to the pot along with the cumin and mix well.
  3. Pour the black beans in a collander to remove the excess liquid from the can and rinse them off in a sink. Now add them to the pot, along with the vegetable stock . Bring to a boil.
  4. Pour half the contents of the pot into a food processor and blend. Return to pot and mix well. Season with salt and pepper.
  5. To serve ladle in small bowls and if desired top with diced onions, cilantro, sour cream and tortilla chips.
